The SNES tracks are most likely Vanilla Lake (either 1 or 2) and a tossup between a version of Mario Circuit, Choco Island, Koopa Troopa Beach, and Ghost Valley. Donut Valley seems unlikely as there's already a version of it in MK8. Vanilla Lake is the most likely of them all due to an ad mentioning it in Coconut Mall. Press the X button (or where the X button would be on a single joy con) to check your rear view mirrors to see when the red shell is getting close, then release your item before it's too late. There is actually another way to do defend yourself though. You can use a stage hazard, dropped item, or even another player to block an incoming red shell.
