Factory 5.3 truck cooling hoses work with your 5.7 radiator. Maybe do away with the factory trans cooler in the radiator and run an external cooler. Ill try and think what else you might need.

It would drop onto your mounts and fit just fine, it would be a pretty easy swap. The only real hangup is the 1500, your 10 bolt and 700R4 would die sooner than later. It has a 08 Express Van 6.0 and 4L80e GEN 4, drive by wire, stand alone engine harness TSP 231/239 LS3 cam. huge learning experience.The 4l80e bone stock will handle any abuse a stock 6.0 can throw at it. If not then L96 + 6Lxx tranny, the L96 and 6l90 will probably take more work to integrate, so it'll be more expensive. The 6l90 (or 80) would just be awesome in a gmt400. As long as they're tuned well they're supposed to be stout.
