They restock every 3 days by default in the XML. As to the questions of what triggers the start of that timer. I have not tested that. My best guess would say they don't start their timer until they actually exist (i.e. the region and chunk they are in have loaded at least once by coming close to, or active visiting)..

After they move into the compound, every seven days, the hordes attack and you have to defend the compound/trader.
