Tl;Dr you should be fine. Actually professors can see if you leave the canvas page. I’m currently a TA and I just checked a quiz submission and I’m able to see it. However, even though they have the capability, I highly doubt a professor will manually check every student to see if they left canvas. Here’s a screenshot:
